Cellulase, Aspergillopepsin, and other fungal enzymes
Research-supported
What it is
Industrial digestive enzymes used in supplements and some food products are commonly produced via fermentation by Aspergillus niger — a mold/fungus species. The fact that an ingredient is plant-based or grain-free doesn't mean it's fungus-free.
Relevant concerns
- AIP (Autoimmune Protocol)
Autoimmune Protocol elimination phase excludes fungal sources; fungal-derived enzymes can sustain immune reactivity.
- Histamine
Fungal fermentation processes can elevate histamine levels.
