Mono- and diglycerides

Research-supported

What it is

Industrial emulsifiers used in baked goods, ice cream, peanut butter, margarine, whipped toppings, and processed dairy. Manufactured from fats — most commonly soybean oil, but also palm, canola, or animal fats. The source organism is NOT disclosed on the label. US allergen-disclosure rules exempt processed ingredients like this even when soy-derived, because the protein has been processed out.

Relevant concerns

  • Soy

Frequently soy-oil derived. Allergen rules don't require disclosure of the source, so soy-allergic and soy-avoiding consumers can't tell from the label.

  • AIP (Autoimmune Protocol)

Excluded on AIP elimination phase as a processed food additive.

This entry is informational. It isn't a substitute for medical advice or a manufacturer's disclosure. When source matters and you can't tell from the label, contact the manufacturer.
