What it is

A generic term for chemically or physically altered starch. On US labels, it can be derived from corn (most common), potato, tapioca, rice, or wheat — and US labeling doesn't require the source to be disclosed unless it's wheat. Canadian labels are more variable.

Relevant concerns

  • Gluten

    Could be wheat-derived. US labels must disclose wheat starch, but cross-contamination and processing inconsistencies occur.

  • Corn

    Most commonly corn-derived.

  • Nightshade

    Could be potato-derived (potato is a nightshade).

  • AIP (Autoimmune Protocol)

    All starches are restricted during AIP elimination phase.
